This is a very inventive way of serving something that looks a little staid to your guests.
Ingredients
3 Zucchini Sliced Lengthwise Then Cut Into ¼ Inch Slices
1 Tablespoon Olive Oil
1/8 Teaspoon Salt
Pinch Freshly Ground Black Pepper
40grams Reduced Fat Soft Goat’s Cheese
1 Tablespoon Fresh Parsley Leaves Minced
½ Teaspoon Lemon Juice
470grams Baby Spinach Leaves
80grams Basil Leaves
Instructions
1. After slicing up the zucchini discard the outermost ones and then brush the rest of them witholive oil on both sides. Then season with some salt and pepper. Then place on the preheated barbecue for around 4 minutes on each side or until the slices are tender.
2. Whilst the zucchini slices are cooking in a small bowl put the goat’s cheese, parsley and lemonjuice and mash together with fork to form a kind of cream.
3. After removing the slices of zucchini from the barbecue place ½ teaspoon of the cheese mixture about ½ inch from the end of each slice of zucchini. Then top with a few spinach leaves and a small basil leaf. Then roll up in and place them seam side down on a plate. Once all the zucchini slices have been rolled up serve to your guests.
