We’re more familiar with fruit and nut chocolate bars than sandwiches, but this is a recipe that crops up in old British cookbooks from the early 1900s. It’s a nice idea, I think, and makes an interesting addition to an afternoon tea spread.
For a really fantastic variation on a more savory note, try a combination of fresh figs and goat’s cheese.
Makes 1
INGREDIENTS
2 large fresh ripe figs, cut in half
A few dried pitted (stoned) dates, finely chopped
A few pecans, finely chopped
2 large slices white bread
Butter, at room temperature
Scoop out the soft flesh from the figs and mix it with the chopped dates and pecans. Spread onto 1 slice of bread.
Butter the other slice of bread and sandwich them together. Cut the crusts off and serve.
