If you invite guests to your barbecue who don’t eat meat then preparing these for them means you don’t actually have to worry about what they are eating coming into contact with what your other guests are going to be enjoying.
Ingredients
560grams Firm Tofu Cut Into 16 Pieces
340grams Asian Eggplant Quartered Lengthwise And Cut Into Pieces
2 Tablespoons Minced Garlic
2 Tablespoons Minced Ginger
60ml Reduced Sodium Soy Sauce
5 Tablespoons Vegetable Oil
2 Green Onions Chopped
Instructions
1. Place the pieces of tofu and eggplant into a resealable bag with the minced garlic, ginger, soysauce, vegetable oil and onions and seal. Then shake the bag very gently to ensure that all the ingredients are combined together well and the eggplant and tofu are covered in the sauce. Place in the refrigerator and leave there for at least an hour.
2. Once the barbecue has heated up divide the eggplant and tofu mixture up between 4 largesheets of aluminum foil. Fold the sides of the aluminum foil up and secure. Then place the bundles onto the barbecue grill and cook for 10 minutes. It is important that halfway through the cooking time you turn the bundles over once to make sure all inside is cooked through evenly.
3. Remove from barbecue and cut open the bundles before then placing on plates to serve to yourguests. Best served with a rice salad.
