For me, the Christmas dinner leftovers sandwich is better than the meal itself. What is it about stuffing everything between two slices of bread that improves it so? Of course, all the components have had time to sit and mature, making them even tastier than they once were. It’s also possible to get a lot more textural contrast and flavor in just one bite.
Once the ingredients are cold, it opens up options on the condiment front, such as chutneys and pickles, which wouldn’t have been appropriate with a hot meal. It is able to deal with leftover Christmas cheese. The list of benefits is endless.
This is my personal favorite combination for a Christmas sandwich, followed by another one, which I’m almost too ashamed to admit to making. Almost.

INGREDIENTS
Leftover cooked turkey meat, preferably brown
Leftover pigs in blankets (sausages wrapped in bacon)
Leftover stuffing
Cheese, sliced, such as Stilton, Brie, or Camembert
Pickled onions, drained and sliced
Mayonnaise
A few token lettuce leaves, for greenery and crunch
2 thick slices white bread
Layer everything up between the slices of bread to make your sandwich. Open wide and chow down on this seasonal beast.
