What’s better than ice cream? An ice cream sandwich, that’s what. If you never made ice cream sandwiches as a kid, it doesn’t matter because you’re never too old to appreciate them. There are so many possible variations on this, including different flavored cookies and ice cream, wafers, biscuits, and extra bits and bobs like chocolate sprinkles, sugar sprinkles, (hundreds and thousands), and even a pot of sauce for dipping. Go wild, you crazy kid.

INGREDIENTS
2 scoops vanilla ice cream
2 chocolate chip cookies
Your choice of extra ingredients (see below)
The recipe for this sandwich couldn’t be easier. Simply sandwich the ice cream between the 2 cookies, add your extra ingredients of choice, and, voilà, it’s ready to eat!
FIVE WAYS TO PIMP YOUR ICE CREAM SANDWICH:
Mix up the flavors—chocolate and mint, vanilla and coffee, salted caramel and banana will all work a treat.
Roll the edges of the ice cream in chopped nuts, colored sprinkles (hundreds and thousands), or chocolate sprinkles. If you want a super-indulgent cookie explosion, you could even roll the ice cream in chopped-up Oreos.
Spread a layer of Nutella or your favorite fruit jelly (jam) onto the cookies before adding your ice cream.
Serve a sauce such as chocolate or caramel on the side for dunking.
Use slices of cake or wafers in place of cookies.
