This particular recipe is suitable not only for vegetarians but also vegans. To make it suitable for vegans to eat simply omit the cheese from the recipe.
Ingredients
6 Large Poblano Chillies or Green Bell Peppers
2 Tablespoons Olive Oil
1 Medium Onion Finely Chopped
2 Garlic Cloves Finely Chopped
2 Jalapeno Chillies Seeded And Chopped
½ Red Bell Pepper Finely Chopped
118grams Freshly Chopped Cilantro
1 Teaspoon Ground Cumin
793gram Can Vegetarian Baked Beans Drained
1 to 3 Teaspoons Hot Sauce To Taste
340grams Pepper Jack Or Monterey Jack Cheese Coarsely Grated
Salt To Taste
Freshly Ground Black Pepper To Taste
Instructions
1. Cut the Poblano chillies or bell peppers in half lengthwise. Then scrape out all the seeds so aspace is made for the filling to sit in.
2. In a frying pan place two tablespoons of olive oil and to this add the onion, garlic, jalapenochillies, bell pepper, cilantro and cumin and cook over a medium heat for about 4 minutes or until the onions have turned golden brown.
3. Now remove the pan from the heat and very slowly stir in the baked beans, hot sauce and226grams of the cheese. Then add salt and pepper to taste. Once this has been done spoon equal amounts of the mixture into the chillies or peppers and then sprinkles the remaining cheese over the top.
