This is a very simple dish to prepare and can be served as a main for any vegetarian guests you have invited to your barbecue or as a side dish to those who will be eating meat or fish.
Ingredients
900 to 1300 grams Red Potatoes Cut Into 1 Inch Cubes
1 Red Bell Pepper Cut Into Strips
1 Small Onion Chopped
2 Tablespoons Olive Oil
2 Teaspoons Chilli Powder
1 Teaspoon Salt
½ Teaspoon Garlic Powder
¼ Teaspoon Red Pepper Flakes
Aluminum Foil
Instructions
1. Preheat the barbecue and place the grill 6 inches above the heat source as you will want tocook the potatoes on a medium heat.
2. Whilst the barbecue is heating up into a bowl combine together the potato cubes, strips ofpepper, onion, olive oil, chilli powder, salt, garlic powder and pepper flakes. Stir well to ensure that the potatoes are covered well in all the other ingredients.
3. Take too large pieces of aluminum foil and place one on top of the other. Now take the potatomixture and place in the center and then fold the sides of the aluminum foil up to create a parcel. Don’t seal the parcels too tightly because some steam will form inside whilst the potatoes are cooking.
4. Now place the parcel on to the barbecue and cook them for 15 minutes. Then turn the parcelsbefore then cooking for a further 15 to 18 minutes before then serving to your guests.
