      How To Make Japanese Fruit Sandwich



      Strawberries and cream, in a sandwich? Surely invented by the British? The answer is no. It’s a popular sandwich filling in Japan, and is, in fact, made with any seasonal fruit, including kiwi and blueberries.

      Makes 1
      INGREDIENTS
      2 slices soft white bread
      Heavy whipping cream (whipped to stiff peaks with a little confectioners’ (icing) sugar, to taste
      5–6 fresh strawberries, hulled and sliced (or other fruit of your choice)
      Spread 1 slice of bread generously with the whipped cream. Top with the sliced strawberries and then the second slice of bread.
      Cut off the crusts and then cut the sandwich into neat shapes (such as fingers or triangles), trimming the sides, as necessary. Serve at once.
