Ingredients
340grams Extra Firm Tofu Cut Into 4 Slabs
2 Tablespoons Achiote Powder
¼ Teaspoon Cayenne Pepper
1 Tablespoon Raw Cane Sugar Or Brown Sugar
3 Medium Garlic Cloves Peeled
2 Big Pinches Of Salt
80ml Fresh Squeezed Lemon Juice
Instructions
1. Take the 3 peeled garlic cloves and sprinkle over some salt. Then with the flat side of theblade of a knife press down on the garlic cloves until a paste is formed. Then in to a bowl place the garlic paste, achiote powder, cayenne pepper, brown sugar and lemon juice and whisk well to ensure all these ingredients are combined together.
2. Next take the slabs of tofu and place these in a shallow baking dish and pour the achiotemarinade over them. Remember to flip the slabs of tofu over a couple of times to ensure that they are coated all over in the marinade. Plus use your hands to also rub the marinade into the tofu. Now cover the dish with some plastic wrap and place in a refrigerator for at least 1 hour. Whilst the tofu is marinating make sure that you go back a couple of times to turn it over.
3. About 15 minutes before you remove the tofu from the refrigerator you should get the barbecuestarted. Place the grill 6 inches above the heat source, as you will want to cook the tofu on a medium heat. Once the barbecue is heated up lightly oil the grill before you place the tofu on it.
4. After placing the tofu on the barbecue brush it with any of the remaining marinade and cook forbetween 10 and 12 minutes, remembering to turn it over occasionally. If you want to create a cross hatch effect on the tofu then as you turn it over rotate it 90 degrees.
