The honey glaze helps to enhance the smoky flavors of the tuna when cooked on the barbecue.
Ingredients
450gram Tuna Fillets
4 Tablespoons Olive Oil
4 Tablespoons Lime Juice
2 Tablespoons Balsamic Vinegar
2 Garlic Cloves Minced
1 Tablespoon Fresh Ginger Root Peeled And Minced
Small Bunch Fresh Coriander Chopped
Honey Glaze
4 Tablespoons Honey
2 Tablespoons Olive Oil
2 Tablespoons Fresh Coriander Finely Chopped
Instructions
1. In a medium size bowl mix together the olive oil, lime juice, balsamic vinegar, garlic, gingerand coriander. Then add to this the tuna fillets, which you turn over several times to ensure that they are evenly coated in the marinade. Cover the bowl over and leave in the refrigerator to marinate for several hours.
2. Preheat the barbecue to cook the fish on a high heat and whilst the barbecue is heating upprepare the honey glaze. To make the glaze simply place the honey, olive oil and coriander in a small bowl and whisk. Once all these ingredients are combined put the bowl to one side ready for use later.
3. Once the barbecue has heated up place the tuna fillets on to the lightly oiled grill and close the
lid. Cook the tuna with the lid closed for 1 to 2 minutes then flip them fillets over and cook for a further 1 to 2 minutes with the lid closed. Now open the lid and continue to cook the tuna fillets until they are barely done, making sure that you baste them frequently with any left over marinade.
4. Before the fish is cooked right through now brush both sides of the fish with the honey glazeand then remove from the barbecue. Serve with some noodles or with a nice crisp salad.
