Barbecued Stuffed Red Snapper
If you are not able to get red snapper then use mullet instead.
Ingredients
6 x 100gram Red Snapper (Mullet) Fillets
110grams Cooked Prawns
110grams Cooked Crab Meat
2 Tablespoons Butter
5 Tablespoons Fresh Breadcrumbs
1 Tablespoon Butter
1 Spring Onion Chopped
1 Stalk Celery Diced
1 Garlic Clove Minced
1 Tablespoon Fresh Parsley Chopped
1/8 Teaspoon Salt
1/8 Teaspoon Freshly Ground Black Pepper
Instructions
1. To make the stuffing for the fish melt 2 tablespoons of butter in a frying pan then add to this thefresh breadcrumbs and sauté over a medium heat until the breadcrumbs have gone brown. Remove from heat and place the breadcrumbs in a bowl.
2. Now add a further tablespoon of butter to the frying pan and to this add the spring onions,celery and garlic and cook until all are tender then add these to the breadcrumbs then stir in both the prawns and crab meat, the parsley and some salt and pepper. Then toss gently.
3. Take eight large pieces of aluminum foil and on two sheets place one of the fish fillets thenmound the stuffing on top of the fish. Now curl up the sides of the foil so that each one forms a tray and place on the barbecue grill and close the lid and cook the fish for between 20 and 25 minutes or until the fish flakes easily with a fork.
4. Once the fish is cooked remove from aluminum foil and place on plates with some fresh greensalad and some crusty bread. Then serve to your guests.
