Barbecued Marinated Swordfish
You will find that swordfish has quite a meaty texture and often needs to be cooked on a medium heat for a little longer than other types of fish do.
Ingredients
4 Swordfish Steaks
4 Garlic Cloves Minced
75ml White Wine
4 Tablespoons Lemon Juice
2 Tablespoons Soy Sauce
2 Tablespoons Olive Oil
1 Tablespoon Savory Seasoning
¼ Teaspoon Salt
1/8 Teaspoon Freshly Ground Black Pepper
1 Tablespoon Fresh Parsley Chopped (Garnish Optional)
4 Lemon Slices (Garnish Optional)
Instructions
1 . In a bowl whisk together the garlic, white wine, lemon juice, soy sauce, olive oil, savory seasoning, salt and pepper. Then pour over the swordfish steaks, which have been placed in a shallow baking dish. Remember to turn the steaks over to ensure that they are well coated in the sauce then place in the refrigerator for 1 hour. Whilst the steaks are marinating turn them over frequently.
2. Whilst the barbecue is heating up remove the swordfish steaks from the refrigerator so that theycan be cooked at room temperature. Also before placing the steaks on the barbecue brush the grill with oil which is placed 4 inches above the heat source as these will need cooking on a very high heat.
3. After placing the swordfish steaks on the barbecue cook for 6 to 6 minutes on each side thenserve garnished with the parsley and lemon wedges to your guests on clean plates with some green beans and new potatoes.
