The Cajun seasoning helps to enhance the flavor and texture of this fish even more.
Ingredients
2 x 225gram Cod Fillets Cut In Half
1 Tablespoon Cajun Seasoning
½ Teaspoon Lemon Pepper
¼ Teaspoon Salt
¼ Teaspoon Freshly Ground Black Pepper
2 Tablespoons Butter
1 Lemon Juiced
2 Tablespoons Chopped Green Onions (White Part Only)
Instructions
1. Whilst the barbecue is heating up take the cod fillets and season both sides with the Cajunseasoning, lemon pepper, salt and black pepper. Then place on a plate and put to one side for now.
2. Now into a small saucepan place the butter and heat over a medium heat before then stirring inthe lemon juice and the green onions and cook for about 3 minutes or until the onions are soft.
3. By now the barbecue should have heated up so place the cod fillets on to the grill, which hasbeen lightly oiled first, and cook on each side for about 3 minutes. Whilst cooking the cod on the barbecue make sure that you baste them frequently with the butter mixture. Remove from barbecue when the cod has a golden brown color to it and flakes easily with a fork. Leave the fillets of cod to rest on a clean plate for 5 minutes before then serving to your guests.
