Trout With Lime And Thyme
The use of lime and thyme helps to enhance the flavor of this very oily fish even more.
Ingredients
2 x 115gram Trout Fillets
Juice Of 1 Lime
1 Tablespoon Olive Oil
1 Tablespoon Fresh Thyme Minced
2 Garlic Cloves Minced
½ Teaspoon Coarsely Ground Black Pepper
1/8 Teaspoon Cayenne Pepper (You Can Add More If You Wish If You Cannot Really Taste It)
Instructions
1. In a bowl mix together the lime juice, olive oil; thyme, garlic, black pepper and cayennepepper then pour it into a resealable bag.
2. Now place the trout fillets in the same bag seal and turn over several times gently to ensurethat the fillets are well coated in the mixture. Place in the refrigerator for at least 30 minutes to allow the trout fillets to absorb as much of the marinade as possible. If possible leave the fish in the marinade as long as possible as more of the marinades flavors will then be absorbed by it.
3. Preheat the barbecue placing the grill 6 inches above the heat source because you will want tocook the trout fillets on a medium heat.
4. After removing the trout from the bag before placing on the barbecue lightly oil the grill. Makesure that you shake any excess marinade off the fish before placing and the grill and any left in the bag can now be discarded.
